As winter enters its last stretch, there's nothing better than a warming soup before the first signs of spring take the edge off the cold. This week, our chef, Oscar Manresa from Barcelona's Casa Leopoldo, shows us a soup he often made with his father at such times: thyme soup.
Thyme soup is a traditional Catalan recipe using an egg, some toast (or a slightly stale baguette from the day before), garlic and thyme. And the recipe is as simple as it sounds:
Ingredients for 2
thyme - bunch
stock - 800ml / 27floz (chicken or vegetable)
bread - 100g / 3.5oz (toast or slightly stale)
garlic - 1 clove
egg - 1
olive oil
Recipe
- In a saucepan, put a splash of olive oil and turn on to medium
- Add a clove of garlic, coarsely chopped, and a bunch of thyme (see video)
- Once the garlic is golden, add the stock, simmer for 10 minutes
- Remove the thyme and garlic
- Add the bread and blend to a soup
- Plate up hot and add the yolk of an egg
- Sprinkle with salt and more thyme to serve
