There are so many varieties of cheesecake, so many recipes, and they can get so complicated. Forget all of them. Here's one you're going to love that only needs three ingredients, thanks to our pastissiers, Patricia and Cristina of La Noria Bakery.
As we said, three ingredients: white chocolate, Philadelphia-style cream cheese and three eggs. It's that easy, and you'll have it in the oven within minutes. Once it comes out, you then have an infinite variety of possibilities to top it. You could keep it simple with icing sugar, pair the white chocolate with some summer fruits, anything you fancy.
Ingredients:
eggs - 3
white chocolate - 125g / 4.5oz
cream cheese - 125g / 2oz / 0.25cups
Recipe:
- Melt the white chocolate over a bain-marie.
- Mix in the cream cheese until it's all incorporated and smooth
- Separate the egg whites from their yolks
- In a clean bowl, whip the whites to stiff peaks
- Mix the yolks into the cheese/chocolate
- Once the whites are ready, add half to the mixture
- Fold them in carefully, trying not to knock out too much air
- Repeat with the other half until well-combined
- Grease a small cake tin and line with baking paper
- Fill this will the cheesecake batter
- Place the tin inside another, larger one
- Fill the larger tin halfway with water
- Place in an oven pre-heated to 170ºC / 340ºF for 20 minutes
- Leave to cool in the fridge for 3 hours
- Decorate and serve
