The dessert chefs from Barcelona's Casa Leopoldo, Rocío Parejo and Eddi Artega, this week offer us some tempting chocolate treats, something akin to a homemade Twix. Even better, you can make them easily yourself at home.
The base is a biscuit which we'll cover in a layer of homemade caramel before smothering the whole thing in chocolate melted in a bain-marie or a microwave. It's your choice of either black, milk, or even white chocolate.
Can you resist the temptation? Or, how about, now that Christmas is just around the corner, you make some to follow your meals and impress your guests?
Ingredients
For the biscuit:
- 125g / 1 cup all-purpose flour
- 100ml / 3.5fl oz single cream
- 60g / 1/3 cup caster sugar
- 30g / 1/8 cup butter
For the caramel:
- 40ml / 1.6fl oz single cream
- 60g / 1/3 cup caster sugar
- 20g / 1.5 tablespoons butter, cubed
To cover:
- 100g chocolate
Recipe
- Start the biscuit mixing the flour and sugar in a large bowl
- Incorporate the cream until you have a batter
- Grease a loaf tin and add the mixture
- Cook in a pre-heated oven at 180°C / 350°F for 25 minutes
- Leave to cool for ten minutes, then turn it out of the mould and leave it to cool completely
- Put a frying pan on to heat
- Once hot, add half the sugar for the caramel
- When that is fully melted, add the other half
- When completely smooth, add the butter cube by cube, mixing each in as they melt
- Meanwhile, boil the cream and then add that too bit by bit while stirring
- Line your loaf tin with greaseproof paper and pour the caramel in
- Put the biscuit back in the tin, on top of the caramel
- Put the tin in the fridge for at least 30 minutes
- Remove from the fridge and cut into individual portions
- Return these to the fridge for one hour
- Melt your chocolate in a bain-marie or a microwave
- Place the caramel biscuits on a wire rack over a tray and then spoon over the chocolate
