This week, our favourite bakers, Patricia and Cristina of La Noria Bakery offer El Nacional the recipe for a good old muffin. A recipe to try with the kids this weekend, we've gone for two toppings: one batch gets sugar and cinnamon, the other gets chocolate chips.
Ingredients:
eggs - 3
sugar - 170g / 6oz / 0.75cups
milk - 65ml / 2oz / 0.25cups
flour - 215g / 8oz / 2 cups
oil - 180ml / 6oz / 0.75 cups
baking powder - 7g / 1.5 teaspoons
pinch of cinnamon
pinch of salt
zest of 1 lemon, grated
Recipe:
- Beat together the eggs and sugar
- Add the milk and mix in
- Slowly add and combine the oil
- Add and mix in the flour, salt and cinnamon
- Add and mix in the baking powder and lemon zest
- Leave the dough to rest in the fridge in a covered bowl for 1 hour
- Prepare your baking tray with the cases
- Fill the cases about half-way each
- Decorate with the chocolate chips or the cinnamon mixed with some more sugar, as you wish
- Bake in a pre-heated oven at 200ºC / 390ºF for 15 minutes
- Remove and leave to cool
- Enjoy!
